I just discovered 3 bags of frozen baked and pureed pumpkin in the freezer. That is the equivalent of 3 cans of pumpkin! Oy! I sure thought we'd be eating a lot of pumpkin this year. Yesterday it was pumpkin yeast bread, so this morning we had pumpkin pancakes. They were a bit on the cakey side... which is fine by me. I'm saving the rest of the pumpkin to make pumpkin woopie pies with cream cheese filling! I know, right! Awesome. Thanks to Martha for the picture.
